Cooking malawah "reminds us of our life back there; that's the food we grew up with."

So says Fatuma Hussein of her family's recipe for malawah, slightly sweet Somali flatbreads that she and her mother taught Maddie to make for our last episode of Bite. They told her to dunk the malawah in a ginger-laced milky tea. With the right spices in your cupboard, the drink is simple to throw together any time:

Spiced Milk Tea


1 cup water
1-inch piece fresh ginger root
A few green cardamom pods
A cinnamon stick
1/2 tsp black peppercorns
1/2 cup water
1 black tea bag or tablespoon of looseleaf black tea
1/2 cup milk or milk substitute
Sugar or honey to sweeten


Peel the ginger root and either mince finely or mash with a mortar and pestle. Grind spices with the back of a spoon or a mortar and pestle. Combine ginger, spices, and water in a small saucepan and bring it to a boil. Simmer for a few minutes.

Add the tea bag or loose-leaf tea. Steep according to the directions or until the water is caramel-colored. Add the milk and simmer on medium heat until bubbles emerge around the rim of the liquid, and it almost comes to a boil. Remove the liquid from the heat and strain it through a fine mesh strainer. Add sugar or honey to taste.
